This is a fabulous, surprisingly light pasta dish that’s sure to please just about anyone’s taste buds! It’s vegetarian friendly, but it’s versatile enough that various proteins and veggies can be added to the sauce. Check out this savory, yummy stuffed rigatoni recipe below!

Ingredients

1 bag stuffed rigatoni (used a spinach, feta & asparagus stuffed rigatoni)
1 can petite diced garlic & olive oil tomatoes (drained)
3/4 cup sliced roasted red pepper
3 tbsp olive oil
1/2 tsp garlic
Sea salt & pepper to taste
Shredded Parmesan for garnish

Cook rigatoni according to package and drain. Toss with a little oil to prevent sticking.

In same pot, saute roasted red peppers and garlic in one tablespoon of olive oil.

Add drained diced tomatoes, one tablespoon of olive oil and seasonings and let simmer.

Toss rigatoni with sauce, plate and serve topped with Parmesan.
