Tomatoes are a red vegetable, or fruit botanically, that you either love or hate.  Tomatoes have many health benefits and nutritional value.  Tomatoes have Lycopene which help protect cells and other structures in the body from oxygen damage and the reduction of heart disease.  Lycopene also aids in the promotion of colon and pancreatic health.  A tomato heavy diet also reduces your cholesterol levels.  A medium sized tomato is about 25 calories with a good source of Vitamins A and C.

 

Roasted Cherry Tomato Pasta

Whole Wheat Penne Pasta (about 2 cups dry)

1 tsp Minced Garlic

1 container of grape tomatoes

Olive Oil

Crushed Red Pepper

Garlic Powder, Onion Powder, Black Pepper, Sea Salt to taste

Parmesan Cheese

Parsley (garnish)

 

Preheat oven to 400 degrees.

Spread tomatoes on a baking sheet, drizzle with olive oil  and toss with black pepper and sea salt.  Place in oven and roast until tomatoes burst.

Add pasta to boiling water and cook for 8-10 minutes.  Drain pasta and add a little olive oil and above seasonings to taste.  Toss pasta with roasted tomatoes and plate.  Top the pasta with Parmesan cheese and garnish with parsley.
