Ingredients:

About 2 large portobello mushrooms, chopped1/4 cup chopped onions
1 red pepper, chopped
1 1/2 tbsp chopped or minced garlic
Juice of 1 lemon
3-4 tbsp olive oil
Sea salt, pepper, garlic & onion powder to taste
Feta or Parmesan cheese, optional

Cook onions, peppers and garlic in 1 tablespoon of olive oil until soft and translucent. Add chopped mushrooms, seasonings and 1 tablespoon of oil and saute until mushrooms soften. Leave on low heat for about 5-8 minutes. Add lemon juice and remaining olive oil and simmer for about 10 minutes. Serve with thin pasta, brown rice or quinoa. Optional, top with feta or Parmesan cheese and enjoy!
