Ingredients:

1 cup Quinoa
2 cups water
3 Roma tomatoes, diced
1 cup frozen corn
1 can black beans, rinsed
juice of 2 lemons
juice of 1 lime
2 tbs olive oil
cilantro
sea salt, pepper and cumin to taste

Rinse quinoa with cold water. Add quinoa and water to a pot and bring to a boil, turn down and simmer until water is absorbed. Let cool. Mix all of the remaining ingredients together in a bowl and serve!
