It’s about that time for a personal update and what better way to do than with what I’ve been eating! I have become something like a snack queen. It’s imperative that I stay fueled throughout the day since I live early in the morning and don’t return home until late at night.

I’ve pretty much got my breakfast, lunch and dinner routine down but I thought I’d share some of the things I snack on in between. I’m a pistachio feign and love to eat them mixed with dried cranberries. That’s an easy go-to. I recently stumbled on Laughing Giraffe Organics Vanilla Snakaroons. Don’t get me wrong, I’ve had coconut macaroons before but these are heavenly. Perfectly sweet in a small bite that comes in a small travel package.

As far as non-packaged items, I am obsessed with crunch peanut butter spread. I go with a natural variety and pair it with peach jam (simple, clean ingredients) spread on thin pieces of bread (I prefer Ozark sandwich slices). I eat that and I’m good to go until my next meal.

I eat a lot of avocado… like a lot. I’m really loving spreading avocado on rice cakes and topping with tomatoes and a little salt and pepper. I don’t know why, but this is so good and a great pick me up snack that doesn’t weigh me down. I can eat like four rice cakes and be good for a good minute.

Onto the sweet side, I have been buying Trader Joe’s dark chocolate, raisin and pecan bars. I had to literally stop myself from going but the bars are less than $2, organic and vegan– you can’t get any better than that. When I’m craving something a little sweet and I don’t want fruit, I go for a couple of pieces from this bar. The raisins blend wonderfully with the chocolate balancing out the bitterness. Those are some of the things I’ve been snacking on for the past month!
